Head of interior, running service, housekeeping, budgets and people, and agencies will not consider a candidate whose basic safety training has lapsed. Plus the basics.

- 3 years by industry policy. For a Ship's Cook Certificate application the Level 3 award must be no more than 3 years old.

- Owning the HACCP plan, which every head chef and most chief stewards do, and it is the level the Ship's Cook Certificate application checks.

What catches interior crew out?
Finishing a GUEST course only earns a course attendance certificate, and the Certificate of Competence arrives later once the awarding body receives a signed training record book. Level 2 food safety is a legal requirement for any interior crew member who processes food in the galley, not only for cooks. Crowd management training is required under the Large Yacht Code once a yacht carries more than twelve passengers, which catches the head of interior.
